1 large red onion
¼ cup salt
¼ cup good olive oil
juice of a large lemon
1 cup of Italian parsley leaves, coarsely chopped
2 bluefish fillets, about ½ lb each
• Slice onion in half circles. Place it in a metal mash strainer and cover with salt. Squeeze firmly with your hands. Let it drain. After several hours, wash all the salt out of the onion under running water.
• Add olive oil, lemon juice, and parsley to crushed onions.
• Meanwhile heat a cast iron skillet on the stove. Place the fish fillets skin side down and transfer the skillet under the broiler. Let it broil for about 6 minutes (depending on the thickness of the fish.) Don’t turn them over. Take it out of the broiler and let it rest for 5 minutes.
• Transfer to two plates and decorate generously with the onion/parsley sauce.
Serves two.
Rakı (Yeni rakı) would make a special drink.
