Cauliflower Stew


1 medium size onion, chopped

1 small amount of vegetable oil

¾ lb. of ground chuck (ground turkey or chicken may be substituted)

1 cup cilantro leaves, coarsely chopped

1 small head of cauliflower, separated into bite size florets

1 cup of chopped canned tomatoes diluted with a cup of water

red pepper flakes and salt to taste

1 cup of frozen peas


• Sauté the onions in oil combine the meat until its loses it's raw color

• Add red pepper and salt

• Mix in cauliflower, cilantro, and tomato mixture; bring to a boil and simmer for 20 minutes

• Add peas during the last 5 minutes of cooking


Serves two as main course.


Recommended wine: Malbec, an Argentine red wine which is softer to the palate then Cabernet.
