Vegetable Medley


2 tbs of olive oil

A bunch of broccolini flowerets

½ lb cremini mushrooms, sliced

1 large red bell peppers, cut into 1-inch squares

Salt and pepper to taste


• Steam the broccolini.

• Sauté mushrooms and bell peppers, mix in broccolini. Add salt and pepper to taste.

• Maybe served warm or at room temperature.


Serves two for lunch accompanied by crusty bread.


A glass of Kim Crawford would hit the spot.
